Grease in an Extract System Is a Fire Load

In a commercial kitchen, extract cleaning is a fire safety measure before it is a hygiene one.

What matters, and why.

Where it accumulates

The canopy is the visible part. The plenum behind the filter bank and the first duct run hold considerably more, and neither is visible from the kitchen floor.

Filters

Removed and soaked in a heated degreaser tank, not wiped in place. A saturated filter stops working and passes grease straight into the duct.

The accessible run

Cleaned to where access allows. Beyond that needs access panels, and any contractor implying a canopy clean covers the full duct is not being straight with you.

Documentation

A dated, photographed record of what was cleaned and what was found, for your food safety file and your insurer.

If this is something you would rather hand over, our specialist cleaning and restoration is scoped at an inspection and confirmed in writing before any work begins. We will also tell you when a job does not need us.

Questions

Answered plainly.

Set by cooking volume rather than the calendar. Heavy frying can mean monthly; a bakery far less.

Yes, with waste removed through a licensed carrier and documentation provided.

No. This is overnight or closure-day work, handed back before your first delivery.
